If you assumed that this cheese from Sue Proudfoot of Whalesborough Farm in Bude, Cornwall, has real character and quality, you'd be right! It's pungent, earthy and soft, its rind washed with local cider

Dorstone, Herefordshire
Ragstone cheese is a soft to firm goat's milk cheese made by Charlie Westhead at Neals Yard Creamery. It is made with unpasteurised goat's milk and uses traditional animal rennet. It has a sharp creamy taste with a slight citrus aftertaste.
Riseley, Berkshire
A semi-soft cheese made from cow's milk. Its made by Anne and Andy Wigmore. Waterloo was originally made on the Duke of Wellington’s estate, hence the name. it has a buttery and slightly salty flavour, which is balanced, by the slightly more acidic centre.
